Things That Make Me Go, “Mmm!”

I thought I'd share a few things I really enjoy, in the hopes you may discover something new to love, too.

First off, I love to eat! There are so many different food options when you're following the Beyond Diet program. Just because food is healthy doesn't mean it has to taste bad. You can provide your body with all the healthy nutrition it needs while also loving the way your food tastes.

One of my favorite meals to have for breakfast is an "everything salad." Since I always have leftovers in the fridge from dinner the night before (a "rule" that we follow in our house to ensure we always have healthy food to grab and go), this is a quick and delicious breakfast. I just combine leftover salad greens and leftover veggies with any leftover protein, such as chicken, fish, or beef, and top it off with my famous salad dressing in a cold salad bowl.

Since I enjoy hard-boiled eggs so much, I make sure to keep at least 12 in the fridge at all times. (My husband and two sons also love this uber-healthy protein!) Grabbing two eggs and a piece of no-wheat banana bread is a great choice that gets me out the door fast. Or, if I have a little extra time, I love to make this egg quiche. If I'm eating breakfast out, I usually order oatmeal (cooked with water only) and scrambled eggs.

Along with leftovers, I really like meals I make in the slow cooker. Having healthy food available (leftovers or not) is so important. If I have cooked veggies, chopped raw veggies (carrots, celery, tomatoes, and peppers), and cooked protein (baked chicken, grilled or broiled fish, or hamburger or steak) available in the fridge, I can throw together any combination and make a deliciously satisfying meal!

My favorite snack is raw nuts. For me, a snack needs to be quick, satisfying, and contain enough healthy fat to keep my energy up all day long. With two young kids, I don't have time to be tired! My favorite types of nuts are pecans, Brazil nuts, and walnuts, which are bursting with healthy Omega-3 fatty acids.

Before having my second son, I loved doing cardio and strength training, such as running intervals and using kettle bells. Since I'm now focusing on re-strengthening my core, my workout is a combination of Pilates, yoga, and barre-type classes.

Besides nutrition and exercise, reading is another activity that I love. Cooking and recipe books are great to read because I like to try different recipes to ensure I keep my kids interested in healthy food. Parenting, business, and self-development are also important to me.

Since I have been eating healthy for over 10 years and have maintained my weight loss, I don't need to count servings anymore. I am mindful of portions, but have learned enough about how much is too much and how much is too little. What I would really love is for every member of Beyond Diet to get to that same point. You being able to instinctively put meals together that make you feel good and that are also delicious would be more thing to make me go, "Mmm!"
