Light and refreshing... and very easy to make!
Blend olive oil, lime juice, shallot (to taste), apple cider vinegar, and raw honey. Slice two apples very thin and pour dressing over them so apples do not brown. Pour over bed of crisp organic greens (I like baby romaine and a little iceberg lettuce for crunch). Sprinkle with chopped walnuts.
