Thai Green Curry

Thai Green Curry with chicken


  • 1/2 c. basil, fresh, organic
  • 4 garlic, fresh, organic
  • 2 tsp. ginger, ground, organic
  • 1/2 tsp. cumin powder, organic
  • 1 med. onion, any type, organic
  • 1 med. carrot, fresh, organic
  • 16 oz. chicken, cooked, free-range, organic
  • 1 med. bell pepper, red, fresh, organic
  • 1 c. mushrooms, brown, organic
  • 1/2 c. green peas, frozen, organic
  • 14 1/2 fl oz. coconut milk, unsweetened, full-fat, organic, canned
  • 1 lime, fresh, organic
  • 1 tbs. coconut oil, raw, extra-virgin, organic
  • 1 tsp. black pepper, ground, organic
  • 1 dsh. cayenne pepper, powder, organic


Heat coconut oil in a wok over medium heat. Add all spices. Add chopped onions and chopped carrots, stir and cook for a few minutes until onion is soft. Add chicken (diced or chopped into bite-size pieces), peppers (cut into strips), and mushrooms. Continue cooking for 5 minutes. Add one can of coconut milk. Reduce heat to low, and simmer. Serve and finish with a squeeze of lime and a sprinkle of salt, to taste. ENJOY!!!
