Tomato and Cucumber Salad

Salads don’t always have to have a leafy green base. This salad uses fresh veggies, fresh herbs, and a homemade dressing to make a delicious lunch or afternoon snack.

Ingredients

    1 clove garlic

    1 tbsp. dried dill weed

    1 tbsp. extra virgin olive oil

    1 c. Greek yogurt

    1 tbsp. lemon juice

    1/4 c. fresh basil

    1/4 c. fresh parsley

    2 cucumber

    4 med. tomato

    1 1/2 c. cucumber

Directions

Prepare the dressing: Combine 1 ½ cups chopped cucumber, garlic, and dill in a blender or food processor. Blend until smooth. Transfer to a bowl and stir in olive oil, Greek yogurt, and lemon juice.

Prepare the salad: Roll and chop basil leaves. Remove stems from parsley. Chop cucumbers and tomatoes. Combine cucumbers and tomatoes in a bowl, and sprinkle with basil and parsley.
