Pepperoni Pizza

Friday night pizzas don't have to come delivered or frozen! Making your own pizza can be healthy, delicious, and fun for the entire family. Try getting your kids involved in adding the toppings; they may be more likely to enjoy healthy food if they take part in the cooking process.

Ingredients

    1/2 tbsp. extra virgin olive oil

    2 c. almond flour

    1 1/2 tsp. baking powder

    2 tsp. dried oregano

    1 tsp. sea salt

    black pepper to taste

    3 egg

    1 c. tapioca flour

    1/2 c. homemade coconut milk

    1/2 c. tomato sauce

    6 oz. mozzarella cheese

    3 oz. turkey pepperoni

Directions

For the Crust:

Preheat oven to 425ºF. Grease a 13"-15" round pizza pan or baking sheet with extra virgin olive oil.

Combine almond flour, tapioca flour, baking powder, oregano, sea salt, and pepper in a large bowl and mix together. Add lightly beaten eggs and coconut milk to the dry ingredients and whisk until combined.

Pour batter onto pizza pan or baking sheet. Use a rubber spatula to spread dough until evenly distributed. The dough will be slightly runny.

Bake crust for 8-12 minutes. Remove from oven and let cool for 3-4 minutes.

For the Topping:

Spread pizza sauce onto baked crust, leaving about 1" of crust around the perimeter. Top with pepperoni and cheese.

Bake for 10-15 minutes.
