Use leftover chicken to make this chili and it becomes a super quick and easy meal!
sea salt & black pepper to taste
1/4 c. water
1 tbsp. coconut oil
1/2 med. onion
1 clove garlic
1 c. diced tomatoes, fresh
1/2 med. red bell pepper
1/2 lbs. cooked chicken
1/4 tsp. dried oregano
1/2 tsp. ground cumin
1 tbsp. chili powder
1/4 tsp. paprika
If you are following the TotalReset Cleanse, eat one serving for dinner on Day 7, and save the second serving for lunch on Day 8.
Heat coconut oil in a medium saucepan. Add chopped onions and minced garlic; cook for about 2 minutes, until onions are slightly translucent. Add diced tomatoes and cook for another 2 minutes. Add chopped red pepper, cooked chicken (chopped or shredded), and spices. Add water to achieve desired thickness (start with ¼ cup and add as needed). Bring to a simmer, reduce heat, and cook for about 30 minutes.
