These great coconut cookies are healthy, tasty and filling.
Combine flour, baking powder, baking soda and salt. Set aside.
Combine butter, eggs, honey, and vanilla.
Add dry ingredients to wet ingredients. Batter will be stiff and crumbly.
Add flaked coconut, nuts, and chopped chocolate.
Roll batter in your palms into 1-inch balls and place on ungreased cookie sheet about 2 inches apart.
Bake at 375°F for 8 - 10 minutes.
Allow cookies to cool on baking sheet for a few minutes before removing to a wire rack to cool completely.
Note: Coconut flour makes the cookies very light and fragile. Handle with care or they will fall apart.
