Chicken Parmesan Quinoa Casserole

One-pan comfort meal!


    1 c. water

    1 1/2 c. tomato sauce

    1/2 lbs. chicken breast

    3 tbsp. almond flour

    3 tbsp. parmesan cheese

    1/4 tsp. garlic powder

    1/4 tsp. Italian seasoning

    1/2 c. mozzarella cheese

    1/2 c. white quinoa


Preheat oven to 400°F. Combine quinoa, water, and tomato sauce in a 8x8 casserole dish.

Cut the chicken into strips. Combine almond flour, parmesan cheese, garlic powder, and Italian seasoning. Toss the chicken strips in the breading mixture – the chicken should be completely covered, and all of the breading should be used up. Arrange the chicken strips on top of the quinoa mixture. (If there was any breading let, press it into the top of the chicken strips.) Bake for 30 minutes.

Remove from oven, stir everything up, and return to the oven. Cook for 20-25 minutes longer, until the chicken is cooked through and the quinoa is absorbed in the liquid.

Remove from oven, sprinkle the top with some additional almond flour and parmesan cheese, top with mozzarella cheese, and bake for 5 minutes, until the cheese is melted.
