Great side dish with steak, burgers, or grilled chicken.
1 cucumber
1 1/2 tbsp. lime juice
1 clove garlic
sea salt & black pepper to taste
2 tbsp. cilantro
1 tbsp. extra virgin olive oil
In a small bowl, combine lime juice, minced garlic, sea salt, and pepper. Add the olive oil a little at a time, continuously stirring with a whisk. Set aside. Add sliced cucumbers to the bowl, and stir to evenly coat all cucumber slices. Add chopped cilantro to the bowl and stir to combine. Serve immediately or let marinate in the fridge before serving.
