Quinoa And Chicken Lunch On The Go

Quick leftover salad. Perfect to take to work or even a good picnic dish. It certainly will keep you going!


  • 1/2 c. spinach, fresh, organic
  • 1/4 med. onion, any type, organic
  • 1/4 tomatoes, roma, fresh, organic
  • 1/4 c. bell pepper, red, fresh, organic
  • 1/4 c. quinoa, cooked, organic
  • 3 olives, black, organic
  • 4 oz. chicken, cooked, free-range, organic
  • 1 tsp. olive oil, extra virgin, unrefined and unfiltered, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste


Chop the veggies. Mix the spinach, onion, tomato, red pepper, quinoa, and olives in a bowl. Top it off with chopped up chicken and olive oil. Season with salt and pepper, and enjoy!

*When at home I like to cook the chicken fresh so I have something warm in my plate but it does work really well cold as well. Perfect for a quick meal to take to work or even to eat on the go.
