Quinoa And Egg Salad

Perfect for a quick lunch, and I found it really helps curbing sweet cravings.


  • 1/4 c. cooked quinoa
  • 1/2 c. carrot
  • 1/2 oz. raisins
  • 1/4 c. corn, canned, organic
  • 1 oz. feta cheese
  • 1/2 oz. walnuts
  • Italian seasoning to taste
  • 2 egg
  • sea salt & black pepper to taste
  • 1 tsp. extra virgin olive oil


Mix the quinoa, shredded carrots, raisins, corn, feta, chopped walnuts, and season with your favorite herbs (I used a Italian seasoning, but anything with oregano and even onion powder will go well here).

Hard-boil, peel, and chop the eggs. Top quinoa mixture with eggs. Pour the olive oil over the and and sprinkle with salt and pepper.

*If you want to make it vegan just replace the eggs and feta with another protein
