Quinoa And Egg Salad

Perfect for a quick lunch, and I found it really helps curbing sweet cravings.


  • 1/4 c. quinoa, cooked, organic
  • 1/2 c. carrot, fresh, organic
  • 1/2 oz. raisins, organic
  • 1/4 c. corn, canned, organic
  • 1 oz. cheese, feta, raw, grass-fed or pastured, organic
  • 1/2 oz. walnuts, raw, organic
  • Italian herbs or seasoning, organic to taste
  • 2 egg, omega-3, cage-free, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste
  • 1 tsp. olive oil, extra virgin, unrefined and unfiltered, organic


Mix the quinoa, shredded carrots, raisins, corn, feta, chopped walnuts, and season with your favorite herbs (I used a Italian seasoning, but anything with oregano and even onion powder will go well here).

Hard-boil, peel, and chop the eggs. Top quinoa mixture with eggs. Pour the olive oil over the and and sprinkle with salt and pepper.

*If you want to make it vegan just replace the eggs and feta with another protein
