The skin comes out nice and crispy with the coconut oil.
Preheat oven to 425ºF.
Combine the salt, pepper, paprika, and garlic powder in a bowl (feel free to use more or less according to your preference).
Do NOT rinse the chicken; pat the chicken dry with paper towels so the oil and seasonings will stick to the skin instead of running off with the moisture. Place the bird in an appropriate size baking dish. No lid/covering necessary.
Rub the entire outer surface of the chicken with the coconut oil (a little goes a long way).
Rub the combined spices all over the outside of the chicken. Add some to the inside if you like as well.
Stuff the chicken with the minced garlic, onion (cut into quarters), and apple (cut into quarters).
Bake in the oven at 425ºF for 15 minutes. Reduce the heat to 375ºF and bake until the juices run clear and/or a meat thermometer reads 180ºF.
Remove chicken from oven and place on a cutting board. Let rest for about 15 minutes before cutting.
