Wonderful accompaniment to bean dishes - additional protein for vegetarians.
Cut the scallions into very thins rounds starting at the white section and going halfway up the pale green section (do not use the dark green). Put them into a small bowl filed with ice-cold water. Cover and refrigerate 1-2 hours. Drain. Put the sliced scallions in a clean dish towel and press out as much moisture as possible. Set aside.
Put the yogurt in a bowl and whisk lightly with a fork until smooth and creamy. Add the salt, pepper, ground roasted cumin seeds, cayenne and mix well; add the scallions and mint. Stir to mix. Serve chilled.
