Oatmeal Muffins

Turn your oatmeal into muffins for a grab-and-go breakfast.

Ingredients

  • 1 1/2 c. oats, old fashioned rolled, dry, organic
  • 1 1/2 c. oat bran, dry, organic
  • 3 egg, omega-3, cage-free, organic
  • 2 med. banana, fresh, organic
  • 1 tbs. baking powder, aluminum-free
  • 1 c. coconut milk, unsweetened, full-fat, organic, canned
  • 1 tsp. vanilla extract, organic
  • 1/2 tsp. sea salt, unrefined and pure
  • 12 stevia, packet
  • 1/2 c. chocolate chips, dark, 70%, raw, organic
  • 1/2 c. pecans, raw, organic

Directions

Preheat oven to 350ºF. Line 12 cups of a muffin tin with cupcake liners.

Combine all ingredients in a large bowl, and mix well.

Evenly distribute the mixture into 12 muffin cups. Bake for 20 minutes. Let cool and enjoy!
