Sweet, salty, and satisfying salmon dish!

  • 3 oz. salmon, fresh, wild-caught
  • 1 pce. bacon, uncured, nitrate-free, organic, pastured
  • 1 tbs. soy sauce, wheat-free, organic
  • 1 tsp. honey, raw, unfiltered, organic
  • 1/2 c. rice, brown, organic
  • 2 oz. avocado, fresh, organic

Pan fry the bacon over medium heat. Remove bacon from pan and place on paper towel. While the pan is still hot, add the salmon. Sear the outside (time depends on thickness of salmon and how you like it). After putting a good sear on one side, flip the salmon to sear the other side.

Mix together soy sauce and honey in a small bowl. Just before the salmon is pulled out of the pan, dump the soy sauce/honey mixture over the top of the fish. IMMEDIATELY turn the fish to coat both sides. The purpose here is to just get the sauce warm - if this stays in the pan, on the burner, it WILL BURN. After fish is coated, pull from the pan.

To serve: plate salmon on top of 1/2 cup of cooked rice. Pour any remaining soy/honey mixture over the fish and rice. Top with bacon (crumbled if desired) and chopped or sliced avocado.
