A dinner the whole family can (and will!) enjoy.
Heat coconut oil in a wok over medium heat. Place diced chicken and minced garlic in the wok, and saute until chicken is cooked through.
Add lemon juice, thinly sliced zucchini, sliced carrot, and thinly sliced onion to the wok. Continue to saute the entire mixture.
Meanwhile, prepare the pasta. Follow the directions on the package to cook the brown rice in a separate pot. Strain and rinse.
Add the broccoli florets to the veggie/chicken mixture, and saute for 3 minutes.
Add the cooked pasta to the veggie mixture. Toss in diced tomatoes.
