Delicious and filling breakfast! Great for cold days and comfort-needing mornings.
Heat 1 tablespoon ghee in a skillet over medium heat. Add chopped red onion, and cook until fragrant. Add chopped sweet potato and spices (except salt). Cook, stirring occasionally, until potato is soft and onions are browned. Add zucchini and let cook for up to 5 minutes. Add salmon, making sure to break it up into little pieces in the pan. Make a space in the middle of the pan. Add the rest of the ghee and crack the all the eggs into the center of the pan. Let sit for a minute and then gently stir the eggs every now and then to scramble them. When the eggs are almost done (still slightly runny but already looking scrambled), stir all the ingredients in the pan together. Cook for thirty seconds. Sprinkle remaining seasoning over everything. Serve hot for best result, but eating it cold is also very enjoyable!
