Delicious lemon-garlic crusted chicken!

  • 8 chicken leg, free-range, organic
  • 1/2 c. garlic, fresh, organic
  • 1/2 c. lemon juice, pure, organic
  • 1 tsp. lemon zest, from fresh, organic lemons
  • 1/4 c. olive oil, extra virgin, unrefined and unfiltered, organic
  • 2 1/2 tbs. oregano, dried, organic
  • 1/2 tsp. sea salt, unrefined and pure
  • 2 tbs. black pepper, ground, organic
  • 1/4 c. parsley, fresh, organic
  • 8 spg. parsley, fresh, organic

Rinse and pat-dry chicken. Discard lumps of fat. Place legs, cut side down, in a single layer in a 12- by 17-inch baking pan. In a small bowl, mix minced garlic, lemon juice, lemon zest, olive oil, oregano, salt, and pepper. Smear garlic mixture evenly over chicken.

Bake in a 375°F oven until skin is well browned, about 1 1/2 hours. After 45 minutes, baste with pan juices every 15 minutes. Remove chicken to a warm platter. Skim and discard fat from drippings. Add 1/2 cup boiling water to pan. Stir to loosen browned bits. Pour sauce into a serving bowl. Scatter chopped parsley over chicken, and garnish with parsley sprigs. Makes 8 servings.
