This recipe has the right combination to feel like you are indulging but without the guilt.
Preheat the oven to 325ºF. Line a large baking sheet with parchment paper or a silicone baking mat and set aside. Mix oats, nuts, and cacao powder together in a large bowl. Melt nut butter, honey, and coconut oil together in a medium bowl and stir until smooth. Mix in the vanilla extract. Pour over oat mixture, and stir well until all oats are moistened. Bake for 30 minutes, stirring and flipping every 10 minutes. Remove from oven and allow to cool at room temperature for at least 30 minutes. The air will help the granola get crunchy. Store covered at room temperature for up to three weeks.
This recipe makes 4 cups and if divided into 6 servings, it should make a 2/3 cup serving.
