Cauliflower Carrot Mash

A delicious and pretty twist on mashed cauliflower. The orange color is gorgeous and it's all very simple! You can never make enough. :)

Ingredients

  • 1 lrg. cauliflower, fresh, organic
  • 3 med. carrot, fresh, organic
  • 2 tbs. turmeric, ground, organic
  • 2 tbs. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 4 tsp. coconut oil, raw, extra-virgin, organic
  • sea salt, unrefined and pure to taste

Directions

Preheat oven to 375°F. Line a cookie sheet or casserole dish with parchment paper. Wash veggies. Cut them up if you like - it will speed up cooking time, but cutting anything up is not necessary! Arrange veggies on parchment paper. Coat veggies with coconut oil. Sprinkle turmeric over everything. Bake/roast in oven until cauliflower is browning on top and the carrots are soft. Pour roasted veggies into a blender or food processor. Add raw butter and sea salt, and puree to your liking. Enjoy!! Have some hot or leftover cold from the fridge.
