Easy, delicious chicken soup!
Dice potatoes, carrots, and celery. Mince onion. Put all veggies into the bottom of the crockpot. Add the chicken breasts and broth. Add the spices, and cook on high for 4-6 hours, or low for 6-8 hours. Before serving, use 2 forks to full apart chicken into bite-sized pieces (by that time it should be very tender and come apart easily).
This also freezes really well, so you can make extra for later, or you can add extra chicken, and then pull it out of the soup and shred it with BBQ sauce.
