Baked Blueberry Donuts

Delicious treat for a weekend morning!


  • 1 tsp. cinnamon, ground, organic
  • 3 egg, omega-3, cage-free, organic
  • 6 tbs. yogurt, greek, plain, full-fat, plain, organic
  • 1 tsp. vanilla extract, organic
  • 1 c. blueberries, fresh, organic
  • 1 1/2 c. flour, spelt, whole-grain, organic
  • 1/2 c. honey, raw, unfiltered, organic
  • 1/2 tsp. sea salt, unrefined and pure
  • 1 1/2 tsp. baking powder, aluminum-free
  • 1/2 tsp. baking soda, pure


Preheat oven to 325ºF. Grease a donut pan with coconut oil.

Combine flour, honey, baking powder, baking soda, salt, and cinnamon in a bowl. Whisk to combine.

In another bowl, combine eggs, Greek yogurt, and vanilla. Use a whisk to mix well.

Add the egg and yogurt mixture to the flour mixture, and stir to combine (without over-mixing). Fold in blueberries.

Fill donut pan 2/3 of the way full. Bake for 10-12 minutes, until a toothpick comes out clean.
