Peanut Butter Power Muffins

These muffins are oh-so-yummy and full of protein.

Ingredients

  • 1/3 c. coconut oil, raw, extra-virgin, organic
  • 1/2 c. peanut butter, creamy, raw, organic
  • 1 med. banana, fresh, organic
  • 1/2 c. applesauce, no sugar added, organic
  • 1 tsp. vanilla extract, organic
  • 2 tsp. baking powder, aluminum-free
  • 3 scp. Spring of Life Plant-Based Protein Powder, any flavor
  • 2 tbs. chocolate chips, dark, 70%, raw, organic
  • 2 tbs. honey, raw, unfiltered, organic
  • 3 egg, omega-3, cage-free, organic
  • 2 c. almond flour, organic

Directions

Preheat oven to 350ºF. Lightly beat eggs. Add honey, eggs, melted coconut oil, peanut butter, mashed banana, applesauce, and vanilla. Mix well. Add baking powder, protein powder, and almond flour. Mix well. Divide batter between 12 muffin cups. Sprinkle with chocolate chips on top. Bake for 17-20 minutes. Store in fridge.
