Ground Beef and Sweet Potato Soup

Tasty beef and vegetable soup.


  • 1 lbs. ground beef
  • 1 1/2 med. onion
  • 1 1/2 med. green bell pepper
  • 3 celery stalk, fresh, organic
  • 5 c. beans, mixed, canned, your favorite, organic
  • 28 oz. diced tomatoes, canned
  • 4 tbs. coconut oil
  • 2 garlic
  • 2 med. summer squash
  • 1 sweet potato
  • sea salt & black pepper to taste
  • seasoning, cajun, organic to taste
  • 2 c. chicken stock


Chop all the vegetables into bite size pieces. In a large stock pot add coconut oil, onions, bell peppers, celery, and garlic; cook until softened. In fry pan cook the ground beef. After veggies are softened add the cooked ground beef, sweet potato, squash, beans, and tomatoes; cover all with water or stock. Bring to a boil then simmer for 45 minutes to an hour until sweet potatoes are soft.
