Cinnamon Apple Sausage Skillet

A great skillet meal for breakfast, lunch or dinner. Gluten and dairy free, this meal tastes like fall!


  • 2 c. butternut squash, fresh, organic
  • 1 lbs. sausage, turkey, breakfast, free-range, organic
  • 1 med. bell pepper, red, fresh, organic
  • 1 med. apple, Granny Smith, fresh, organic
  • 1 sml. onion, yellow, organic
  • 4 egg, omega-3, cage-free, organic
  • 1 tsp. cinnamon, ground, organic
  • 1/2 c. sea salt, unrefined and pure
  • 1/2 tsp. cayenne pepper, powder, organic
  • maple syrup, pure, organic to taste


Chop squash into cubes and bake at 350ºF for 20-30 minutes, until soft.

Cook breakfast sausage in a skillet, breaking it up as it cooks, until brown. Add chopped red bell pepper, chopped apple (Granny Smith is best but I had red delicious), and chopped onion. Cook all together. Add cooked butternut squash and saute until all ingredients are cooked.

Whisk 4 eggs and add to the skillet, stirring constantly. Season with cinnamon, sea salt, and cayenne pepper. Drizzle with maple syrup for more sweetness or eat without.
