Baked Egg With Arugula

This is a delicious breakfast and a great way to add arugula to your breakfast. Depending on your metabolism, eat 1 or 2 or add turkey bacon for extra protein


  • 4 egg, omega-3, cage-free, organic
  • 1 c. arugula, fresh, organic
  • 1 clove garlic, fresh, organic
  • 1 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1 chives, fresh, organic
  • 2 oz. cheese, shredded, any type, raw, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste


  1. Preheat oven to 350 degrees.

  2. Put 1 cup of arugula in a small bowl, add minced garlic and olive oil and toss. Put a bed of arugula in the bottom of 4 ramekins.

  3. Crack 1 egg over the arugula, topped with raw cheese, chives, salt and pepper to taste. Bake 12 to 14 mins in a 350 degree oven. Take out and let rest for 3 to 5 mins. This is easy and delicious!
