Summertime Lamb dish

This is a dish we tried out for the first time tonight. Simple but delicious


  • 6 oz. lamb, grass-fed, organic
  • 2 tbs. orange zest, fresh, organic
  • 2 tbs. lemon zest, from fresh, organic lemons
  • 1 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste
  • 1 garlic, fresh, organic


  1. Grate the rind of a lemon and an orange.

  2. Place 2 Tbsp of each of the rinds in a bowl. At this point, you can chose to crush a garlic clove or leave it out. Add to the bowl. Add Salt and pepper to your taste (I used a teaspoon of salt and pepper). Add olive oil and mix.

  3. Brush lamb with the mixture and cook on a preheated grill for 4-6 mins depending on your texture of choice. We had some potatoes (like the Rosemary potatoes in my recipe box) to the dish with salad.

Simple, light and quick dinner!
