This is a quick and easy lunch.


  • 2 egg, omega-3, cage-free, organic
  • 3 egg white, from large egg, cage-free, organic
  • 1 1/2 tbs. dijon mustard, organic
  • 2 tbs. flax seeds, ground or meal, organic
  • 1 lettuce, romaine, organic


Grind flax seeds in Vitamix blender. Add other ingredients and combine on low. Serve over romaine lettuce.
