Burger Vegetable Soup

Wonderful lunch or dinner made with buffalo, elk or beef and lots of vegetables and herbs.

Ingredients

  • 8 oz. ground buffalo
  • 1/2 lrg. onion
  • 1/2 c. celery
  • 1 lrg. tomato
  • 1 c. carrot
  • 2 tsp. coconut oil
  • 4 c. water
  • sea salt & black pepper to taste
  • 1/4 tsp. dried thyme
  • 1 pinch garlic powder
  • 1/4 tsp. dried rosemary
  • 1/4 tsp. fresh parsley
  • 1 c. spaghetti squash
  • 1 bay leaf

Directions

Saute burger and onions in 2 tsp. of coconut oil until onions are tender and meat is cooked. Add celery, tomato, carrots, water and seasonings. Bring to a boil, reduce heat and simmer for about 20 minutes, until carrots are tender. Add the spaghetti squash or other left over vegetable, continue cooking another 5 minutes. Remove the bay leaf. Taste and adjust seasonings to your liking. Now enjoy!
