Wonderful lunch or dinner made with buffalo, elk or beef and lots of vegetables and herbs.

  • 8 oz. buffalo, ground, free-range or pastured, organic
  • 1/2 lrg. onion, any type, organic
  • 1/2 c. celery, fresh, organic
  • 1 lrg. tomatoes, red, fresh, organic
  • 1 c. carrot, fresh, organic
  • 2 tsp. coconut oil, raw, extra-virgin, organic
  • 4 c. water, purified
  • sea salt, unrefined, & fresh ground pepper, organic to taste
  • 1/4 tsp. thyme, dried, organic
  • 1 pinch garlic powder, organic
  • 1/4 tsp. rosemary, dried, organic
  • 1/4 tsp. parsley, fresh, organic
  • 1 c. squash, spaghetti, fresh, organic
  • 1 bay leaf, organic

Saute burger and onions in 2 tsp. of coconut oil until onions are tender and meat is cooked. Add celery, tomato, carrots, water and seasonings. Bring to a boil, reduce heat and simmer for about 20 minutes, until carrots are tender. Add the spaghetti squash or other left over vegetable, continue cooking another 5 minutes. Remove the bay leaf. Taste and adjust seasonings to your liking. Now enjoy!
