Chicken Cranberry-Almond Salad

This salad is a smaller sized copycat of a certain restaurant salad, using organic ingredients. For a 2 carb salad, just double the veggies.


  • 1 oz. greens, mixed, fresh, organic
  • 1 oz. cucumber, fresh, organic
  • 1 oz. tomatoes, red, fresh, organic
  • 1/4 oz. cheese, Gorgonzola, grass-fed or pastured, organic
  • 4 oz. chicken breast, skin-on, organic, free-range
  • 1/4 oz. cranberries, dried, organic
  • 1 tbs. olive oil, extra virgin, unrefined and unfiltered, organic
  • 1/4 tbs. vinegar, apple cider, organic, unfiltered, raw
  • 1/4 oz. almond, sliced, organic, raw


Put lettuce on plate or in salad bowl. Sprinkle with cucumber, tomato, almonds, cranberries, and Gorgonzola. Top with chopped chicken breast. Pour dressing over salad. Enjoy!
