Chicken Cranberry-Almond Salad

This salad is a smaller sized copycat of a certain restaurant salad, using organic ingredients. For a 2 carb salad, just double the veggies.


  • 1 oz. mixed greens
  • 1 oz. cucumber
  • 1 oz. tomato
  • 1/4 oz. gorgonzola cheese
  • 4 oz. chicken breast, skin-on
  • 1/4 oz. dried cranberries
  • 1 tbs. extra virgin olive oil
  • 1/4 tbs. apple cider vinegar
  • 1/4 oz. sliced almonds


Put lettuce on plate or in salad bowl. Sprinkle with cucumber, tomato, almonds, cranberries, and Gorgonzola. Top with chopped chicken breast. Pour dressing over salad. Enjoy!
