Salmon Salad Boats

This is a very light and refreshing salad served on whole romaine lettuce, which makes them look like boats. Or can be served on sliced cucumbers. (like a cracker). The Vegenaise can be purchased at sprouts in the fridge section.

Ingredients

  • 4 oz. salmon, baked, wild-caught
  • 1 tbs. onion, any type, organic
  • 1/4 c. tomatoes, diced, fresh, organic
  • 1/4 c. bell pepper, red, fresh, organic
  • 1 tbs. Unknown (0)
  • 2 lrg. celery stalk, fresh, organic
  • 1 head lettuce, romaine, organic

Directions

Dice up: Onion, Tomato, red bell pepper and celery Blend into cook salmon Add Vegenaise (mayo sub) Mix well. Season to taste. I didn't use any because my salmon was cooked with salt and dill. Spoon onto Leaf and/or cucumber chips.
