Black Eyed Pea Salad

Great cold or hot. A southern girl's favorite. Honey optional!


  • 1 1/2 c. black eyed peas, fresh, organic
  • 2 tbs. coconut oil, raw, extra-virgin, organic
  • 1 onion, any type, organic
  • 1/4 tsp. black pepper, ground, organic
  • 1 bell pepper, green, fresh, organic
  • 2 stlk. celery stalk, fresh, organic
  • 1/4 tsp. sea salt, unrefined and pure
  • 2 c. tomatoes, red, fresh, organic
  • 1 tbs. honey, raw, unfiltered, organic


Sauté first 8 ingredients except peas in a skillet. Place all ingredients in a slow cooker, and cook on low 8 hours. Add tomatoes and cook on high 30 minutes. Sprinkle with crumbled bacon.
