Veggie Meat Loaf by Vi

This is a family favorite. The veggies make it super moist and delicious. Another quick and easy recipe - who has time to waste.


  • 1/2 med. bell pepper, green, fresh, organic
  • 1 stlk. celery stalk, fresh, organic
  • 1/4 c. parsley, fresh, organic
  • 1 lbs. beef, ground, free-range or grass-fed, organic
  • 1 egg, omega-3, cage-free, organic
  • 1/2 c. oats, old fashioned rolled, dry, organic
  • 1 tsp. worcestershire sauce
  • 6 oz. tomato sauce, organic
  • 1 sea salt, unrefined, & fresh ground pepper, organic
  • 1/2 med. onion, any type, organic
  • 1 lrg. carrot, fresh, organic


In a food processor make the bread crumbs using a slice or heel of SWG bread. Remove to a dish. In the food processor lightly chop the veggies. Reserve 1/2 of the tomato sauce and add rest of the ingredients to processor. Lightly pulse to mix together. Grease a loaf pan/ baking dish with coconut oil or Pam and add mixture. Top with rest of the tomato sauce. Bake at 350 degrees for about 1 hour. Note: This is Gluten-free if using oats instead of the SWG bread crumbs.
