A hearty, chunky, satisfying meal.

  • 1 1/4 lbs. beef, ground, free-range or grass-fed, organic
  • 2 c. bell pepper, any color, fresh, organic
  • 1 c. onion, any type, organic
  • 5 garlic, fresh, organic
  • 1 chili pepper, jalapeno, fresh, organic
  • 2 tbs. chili powder, organic
  • 1 tbs. cumin powder, organic
  • 1 tsp. coriander, ground, organic
  • 1 tsp. oregano, dried, organic
  • 1/2 tsp. sea salt, unrefined and pure
  • 3 c. beef broth, organic
  • 1/2 c. cilantro, bunch, fresh, organic
  • 1 c. tomatoes, diced, fresh, organic
  • 2 c. pinto beans, canned, organic

Brown the beef (can substitute stew meat for ground beef). Add the diced bell pepper (can use any combination of red, green, orange, yellow), diced onion, minced garlic, and diced jalapeno. Cook about 8 minutes. Add the spices, salt, beans, tomatoes, and beef broth. Stir well. Bring to a boil. Reduce heat to medium-low and allow to simmer, uncovered for about 40-45 minutes, or until it has reduced to a chili-like consistency - nice and thick. For the last 15 minutes of cooking, stir in the 1/2 cup of cilantro. Serve immediately and enjoy!
