Delicious pancakes. Wheat free, dairy free
Place the eggs and sliced banana into blender or food processor and blend on high until banana is smooth and mixture is well combined. Spray a non stick frypan with a little coconut oil and pour small amount of mixture into the pan. Cook on low heat until upside is firm then turn and cook other side. Don't make them too big as they will break when trying to turn them. serve with puree strawberries or squeezed lemon juice with a scrape of honey.
