When you just need that little bit of sweet without the guilt, try having a couple of these with a hot cup of tea.
Preheat oven to 360ºF. Line a baking sheet with parchment paper.
Combine almond flour, baking powder, and dried cranberries (it's important to mix these together first so the cranberries won't stick to the baking sheet).
In a separate bowl, lightly beat the egg. Add the honey, melted coconut oil, and vanilla. Add the chia seeds (or substitute flax seeds) and orange zest.
Add the dry ingredients to the wet ingredients, and stir to combine. Spoon mixture onto baking sheet. Bake for 12-15 minutes, until tops begin to brown and cookies are firm.
