Super Easy Spaghetti Squash Bake

This recipe is incredibly easy to make.. and it's seriously delicious. Great substitute for spaghetti noodles!

Ingredients

  • 1 med. spaghetti squash
  • 1 c. tomato sauce
  • dried oregano to taste
  • garlic powder to taste
  • sea salt & black pepper to taste
  • 1 c. mozzarella cheese
  • dried basil to taste

Directions

Preheat oven to 450ºF. Pierce spaghetti squash in several places (so the squash doesn't explode in the oven). Place squash on a baking sheet and bake for 1 hour and 20 minutes, flipping the squash over halfway through. Once it's done cooking, cut off the top of the squash and cut it in half lengthwise. (This is not the "typical" way to cook a spaghetti squash, BUT it is MUCH easier to cut the squash after it's cooked than it is to cut it before cooking.)

Scoop out the seeds the way you would in a pumpkin.

Use a fork to shred both sides of the squash (this is SO easy... and it really does look like spaghetti noodles!) all the way down to the skin.

Move the "noodles" into a baking dish. Season with spices, add tomato sauce, and mix well. Sprinkle the shredded mozzarella on top of the squash. Bake for about 15 minutes, until cheese is melted. Serve hot.

Another option is to bake the squash right in the shells. Arrange empty shells in a baking dish. Combine the "noodles," spices, and tomato sauce in a large bowl. Divide the mixture between the shells. Top with mozzarella cheese. Bake for about 15 minutes, until cheese is melted. Serve hot.
