Egg and Spinach Omelet

Yummy egg and spinach omelet.


  • 2 egg
  • 1 c. spinach
  • 1 tsp. coconut oil


Melt coconut oil in pan. Beat eggs in a small bowl and add torn spinach. Pour in pan and cook. When eggs set, use a spatula to fold in half and let cook for another minute or two, until fully cooked through.
