Afternoon Dip

Simple and quick dish that can be used as afternoon snack or over salad for a bit of lunch on a busy day.

Ingredients

  • 1 c. cottage cheese, full-fat, raw, grass-fed or pastured, organic
  • 4 oz. salmon, smoked, wild-caught
  • 1 tsp. chives, fresh, organic
  • sea salt, unrefined, & fresh ground pepper, organic to taste

Directions

Chop salmon into small bits - make sure there's nothing other than salt in the salmon when you buy it. Mix with the other ingredients and serve with your choice of carbs. I like it with a spelt cracker or slice of SWG bread. Then add some cherry tomatoes or chia seeds for fiber. (In the picture I also had some on lettuce, as a wrap.) This is very simple but super tasty and makes a difference from nuts at snack time.
