1/2 lbs. ground beef
2 tbsp. coconut oil
1 c. white mushrooms
1/2 c. onion
2 med. carrot
1 stlk. celery
2 c. tomato sauce
2 tsp. ground cumin
sea salt & black pepper to taste
Heat coconut oil in a skillet over medium heat. Saute diced onion, carrots, and celery with sliced mushrooms for 15 minutes, or until tender. Add ground beef, cumin, salt, and pepper. Cook until meat is almost completely cooked. Add tomato sauce and let mixture simmer for about 10 minutes. Serve in a bowl or make wraps using large leaves of Romaine lettuce.
