Spinach Artichoke Chicken

Spinach Artichoke Dip is one of the most popular appetizers one the menu at many restaurants. It is SO easy (and much healthier) to make at home, though… and it makes a delicious topping for chicken.


  • 1 lbs. chicken breast, skin-on
  • 10 oz. frozen spinach
  • 8 oz. artichoke hearts, unmarinated, organic
  • 1 c. Greek yogurt
  • 1/2 c. parmesan cheese
  • 2 tsp. garlic powder
  • 1 oz. mozzarella cheese


Preheat oven to 375ºF. Cut chicken into bite-size pieces, season with salt and pepper, and arrange in a baking dish. Bake for 15 minutes.

While chicken is baking, combine chopped spinach (drained), chopped artichoke hearts, Greek yogurt, Parmesan cheese, and garlic powder in a bowl and mix well.

Pour mixture over chicken in baking dish. Bake for an additional 20-25 minutes.

Optional: Turn on broiler. Top chicken and spinach mixture with shredded mozzarella cheese, and put back in the oven for 3-5 minutes.
