Lemon spiced rice

This Indian inspired dish is the perfect accompany to all things Chicken! very fresh and lemony and the jalapeno gives it a nice kick!


  • 1 tbs. coconut oil, raw, extra-virgin, organic
  • 1 tsp. mustard seed, organic
  • 1 tsp. turmeric, ground, organic
  • 2 garlic, fresh, organic
  • 1 shallots, fresh, organic
  • 1 chili pepper, jalapeno, fresh, organic
  • 2 c. rice, brown, organic
  • 3 oz. cashews, raw, organic
  • 1 lemon, fresh, organic
  • 1 pinch sea salt, unrefined and pure


  1. Heat oil in a large heavy saucepan over medium heat. Add mustard seeds and turmeric and cook, shaking pan, until mustard seeds pop, 2-3 minutes.
  2. Add garlic, shallot and chile and cook, stirring occasionally about 3-5 minutes.
  3. Add rice and cashews and stir to coat. Add lemon zest, juice, salt, and cashews and fry for another 5-10 minutes over medium heat until cashews are slightly toasted and rice starts to brown.
