Fried Zucchini

We CAN do fried zucchini and it tastes great!

  • 2 zucchini, fresh, organic
  • 1 egg, omega-3, cage-free, organic
  • 1/4 c. flour, brown rice, organic
  • 1 tsp. water, purified
  • 1/2 c. cheese, parmesan, raw, organic
  • 1/2 tsp. sea salt, unrefined and pure
  • black pepper, ground, organic to taste
  • 1 tsp. garlic powder, organic
  • 1/2 tsp. onion powder, organic
  • 1 coconut oil, raw, extra-virgin, organic
  • 1 c. breadcrumbs, made from sprouted whole-grain bread, organic

Heat oil in a cast iron or other heavy skillet. I like cast iron because it seems to provide better browning. Combine panko crumbs, parmesan cheese, salt, pepper, garlic powder and onion powder in a bowl or bag and set aside. NOTE: you can use more or less of the spices as you prefer. Beat egg and water until incorporated. Dredge the zucchini quarters in the rice flour/salt mixture and shake off any extra. Dip floured zucchini in the egg wash and cover completely. Roll the zucchini in the panko mixture until completely coated.
Fry the zucchini until golden brown. Enjoy -- a lot!

Note: I did not count the egg as a protein because you'll probably end up throwing half of it away. Same for the rice flour and panko for that matter so use your best judgement on how to count this. I tried to be over cautious and called it 2 carbs per serving. Also, while I know panko is made with wheat flour, it ends up being very little. I tried the recipe with SWG crumbs and it was tough to me but you can give it a go if you want to try it yourself.
