Spelt Flour Peanut Butter and Chocolate Chip Cookies

These are melt in your mouth yummy, if you love peanut butter. Modified a recipe I found online to work with the ingredients I had at hand.


  • 3/4 c. flour, spelt, whole-grain, organic
  • 1/2 tsp. baking soda, pure
  • 1/2 tsp. peanut butter, creamy, raw, organic
  • 3 tbs. honey, raw, unfiltered, organic
  • 2 tbs. coconut oil, raw, extra-virgin, organic
  • 1 tsp. vanilla extract, organic
  • 1/2 c. nut butter, any kind, organic
  • 1 egg, omega-3, cage-free, organic
  • 1 lrg. chocolate chips, dark, 70%, raw, organic


Melt the coconut oil! Combine all ingredients listed. Stir just until all ingredients are mixed. (Don't over mix!) Spray cookie sheet with olive oil. Measure 1.1 to 1.2 oz for each cookie. Press on large chip into each cookie. Bake at 350°F for 10 minutes. Allow to cool for about 10 minutes. Enjoy!
