My classic, homemade chocolate chip cookie + vanilla ice cream = AMAZING ice cream sandwiches :)

  • 8 tbs. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 3/4 c. coconut sugar, organic
  • 1 egg, omega-3, cage-free, organic
  • 1 tsp. vanilla extract, organic
  • 1/2 tsp. baking powder, organic, gluten & aluminum-free
  • 1 3/4 c. flour, spelt, whole-grain, organic
  • 1/4 tsp. sea salt, unrefined and pure
  • 1/2 c. chocolate chips, dark, 70%, raw, organic

Adjust oven rack to middle position and preheat oven to 350°F. Line a baking sheet with parchment paper Using an electric mixer, beat butter and coconut crystals in a medium bowl. Add egg and vanilla and beat until combined. In a separate small bowl, combine flour, baking powder. and salt. Fold dry mixture into wet mixture until just combined. Fold in chocolate chips. Using a cookie or ice cream scoop, dollop cookie dough onto prepared baking sheet. Bake for 12 to 15 minutes, rotating pan halfway through. Cool on pan for 10 minutes then transfer to wire rack to cool completely. Once cookies are completely cooled, transfer two cookies to a small plate. Flip one cookie so the bottom is facing upward. Place one scoop of vanilla ice cream on the flipped cookie, spread ice cream out evenly over cookie, and place remaining cookie on top. Serve and enjoy!
