These are a great way to get quick protein in your diet in the morning or for a snack. The recipe makes 10 pancakes so each small pancake packs 1 serving of protein.
Mix all ingredients except coconut oil into a blender. Place the eggs into the blender first then all the powders and then top with cottage cheese. This will prevent any of the powders or flour from caking on the sides of the blender. Blend until smooth batter is created. Grease a cooking pan with either the coconut oil spray or coconut oil. Pour 6 in diameter circles into pan and cook pancakes.
The entire batter has 10 proteins so you can make 10 small pancakes with 1 protein or 5 pancakes with 2 proteins each. You can also top with organic almond or peanut butter for added protein.
