Quick and easy recipe for grab-and-go muffins!
Preheat oven to 350ºF. Line 12 cups of a muffin tin with cupcake liners (or grease them using coconut oil).
Combine oat flour, spelt flour, cinnamon, sea salt, baking powder, and baking soda in a food processor. Pulse to combine. Add Greek yogurt, ripe banana, melted coconut oil, maple syrup, applesauce, and vanilla. Pulse to mix well. Add eggs and pulse to lightly mix. Stir in blueberries with a spoon. Pour into 12 muffin cups and bake for 25 to 30 minutes. Enjoy! :)
