Simple Black Bean Soup

A simple, delicious black bean soup that really satisfies!


  • 1/4 c. green onion
  • 1 tsp. garlic
  • 2 c. chicken broth
  • 30 oz. black beans, cooked or canned, organic
  • 2 tbs. tomato paste
  • 15 oz. tomato
  • 4 oz. green chili pepper
  • 1 tsp. ground cumin
  • 1/2 tsp. sea salt
  • black pepper to taste
  • 3 tbs. sour cream, organic
  • 1 tbs. extra virgin olive oil


Heat Olive Oil over medium heat in a large soup pot, swirling to coat the bottom. Add green onions and garlic; stir and cook for 1-2 minutes. Add chicken broth and next 7 ingredients (through freshly ground pepper); stir occasionally and bring to a boil. reduce heat to low and simmer, covered, for 20 minutes or longer if desired. Ladle into serving bowls and top with sour cream, if desired.
