Spanish Quinoa

Quinoa takes the place of rice in this dish for a great diabetic recipe.

Ingredients

  • 3 c. quinoa, white, organic
  • 1/4 c. butter, unsalted, organic, raw or unpasteurized, grass-fed/pastured
  • 1 lbs. beef, ground, free-range or grass-fed, organic
  • 1 c. celery, fresh, organic
  • 1/2 c. onion, any type, organic
  • 1 tsp. cilantro, bunch, fresh, organic
  • 2 c. tomato sauce, organic

Directions

Prepare 1 cup of dry Quinoa according to package directions to make 3 cups of cooked Quinoa. In a large frying pan over medium heat, melt butter and cook ground chuck, celery, and onion until meat is brown and vegetables are tender. Mix in cooked Quinoa, chili powder, and sauce. Cook until sauce is absorbed into Quinoa and of desired thickness, about 50 to 10 minutes.
