Great, healthy appetizer and finger food!
Preheat oven to 350ºF, and grease a mini-muffin tin. Combine cooked quinoa, lightly beaten egg, shredded mozzarella, minced garlic, basil, oregano, and sea salt in a bowl and mix well. Scoop about a tablespoon of the mixture into each muffin slot. Bake for 15-20 minutes. Serve warm, dipping in tomato sauce.
